The first pizzeria in Australia was Toto's in Lygon Street, Carlton. Run by Frank Fera, Melbourne's cuisine was given a huge shake and we now see the results in almost every suburb around Australia. What does this have to do with Rossini? Well, now that Toto's has been sold, the Fera's have moved on and opened the Rossini 'Ristorante Italiano' in Malvern. Extremely popular, and with somewhat more than pizza on the menu, the Fera's, under direction of Mario Fera, have created another success story. Traditional Minestrone heads the soup menu, and we can travel down to see not only the standard Lasagne Bolognese, Fettucine Carbonara, and Cotoletta di Pollo alla Parmigiana (Chicken Parmigiana) and, of course, pizza, but also some unique specialities like Scalloppine Vesuvio (veal with eggplant, tomato and mozzarella), Spaghetti Vongole e Zucchine (clams and zucchini in white wine sauce and tomato), Salmone in Crosta di Prezzemolo (Salmon Darne covered in a pesto of parsley), and more.
